ugly bananas.

anyone have a good & easy banana bread recipe? i'm ashamed to say i've never made banana bread and i have a pile of bananas on the counter i need to use.

Julie...I'm pretty sure this is the recipe I use....(I'm at my mom's house on her computer) It's from

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

and you can add nuts if you want, I think they ruin bread, or cookies, or anything baked. Especially when they give me canker soars.

so funny kaisa sent you a recipe. here is an awesome one for banana crumb muffins:

1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 bananas(mashed)
3/4 cup sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tbsp. flour
1/8 tsp. ground cinnamon
1 tbsp. butter

preheat oven to 375. lightly grease or line muffin tin.
in a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. in another bowl, beat together bananas, sugar, egg and melted butter. stir the banana mixture into the flour mixture until just moistened. spoon batter into prepared muffin pan.
In a small bowl, mix together brown sugar, 2 tbsp. flour and cinnamon. cut in 1 tbsp. butter until mixture resembles coarse cornmeal. sprinkle over muffins.
bake in preheated oven for 18-20, until toothpick comes out clean.

i was about to send you one, and then i thought, well the girls have taken care of it. we like to pour about a gallon of butter over the top when it comes out of the oven. that way its more fattening and a million times better.

Thats so funny! Everyone beat me to it! I was going to mention too! :) I go there all the time for recipes :) Infact, I had three badly bruised bananas, so two days ago I got on and got a recipe for banana muffins. They turned out really yummy! :)

Hi again. Emily just called me. She and her fam are roadtripping all over the place and want to stay with someone up there in Spokane this MOnday the 16 and Tues. Where do you think would be the best place to stay? Although there's a lot of 'em, Emily's extremely clean and doesn't take up a lot of room. Can you, or Arah, or your momma call her? Thank you!!!
